How can I change the Screen Resolution?

A lot of programs suggest I change the screen resolution such as iTunes and Windows Movie Maker saying that a better screen resolution would be 1024x768 or higher. I tried changing it and the screen doesn't fit the monitor's size. How do change the screen resolution and still allow it to fit on the monitor?
